Heartwarming Blueberry Pie

Blueberries are not just delicious; they’re also packed with antioxidants and vitamins. And let’s be honest, there’s nothing quite like the smell of a blueberry pie baking in the oven.
It fills the air with warmth and happiness, making it a perfect dessert for gatherings, family dinners, or just a cozy night in.
Ingredients:
- 850g of frozen or fresh blueberries
-135g of granulated sugar
-31g of all purpose flour
14g of cornstarch
-1 tsp of cinnamon
-1 tsp vanilla extract, optional
-30ml lemon juice
-1 tsp lemon zest
-14g cold unsalted butter, cut in small cubes
-1 large egg white with 1tbsp milk
Instructions:
1. Start by preheating your oven to 220°C. This will ensure a crisp crust that we all crave!
2. Prepare the Filling: In a mixing bowl, combine the blueberries, sugar, cornstarch, lemon juice, vanilla extract, and a pinch of salt. Gently stir until the blueberries are coated and set aside for about 10 minutes.
3. Roll out your pie crust (shop bought or homemade), and place it in a 23cm pie dish. Pour the blueberry mixture into the crust and dot it with small pieces of butter.
4. If you're feeling fancy, you can create a lattice design with another piece of pie crust for the top, or you can just use a full crust. Don’t forget to make some slits for the steam to escape!
5. Place your pie in the preheated oven and bake for about 15 minutes. Then reduce the temperature to 180°C and continue baking for another 30-35 minutes, or until the filling is bubbly and the crust is golden brown.
6. Once done, let the pie cool for at least 30 minutes before slicing. It’s a perfect treat served warm, maybe with a scoop of vanilla ice cream on top!
